Tarte au poulet - Chicken pie

Nous avions dîné hier soir avec les enfants et petits enfants. Aussi, avions nous préparé, non pas 1 poulet rôti, mais 2...
Nous avions une quantité de restes suffisamment conséquente pour préparer une tarte au poulet et voici ce que ça donne:

Tarte au poulet

1 pâte feuilletée Thermomix
1/2 litre de béchamel
Les restes de poulet, désossés et sans la peau, en cubes
1 petite boite d'asperges, découpées en tronçons
Fromage râpé

Préchauffez le four à 180°C, chaleur tournante.
Commencez par foncer un moule à tarte avec la pâte feuilletée.
Mélangez poulet, asperges et béchamel dans le bol et garnissez la tarte.
Saupoudrez de fromage râpé et enfournez 30 à 35 minutes, le temps qu'un beau gratin se forme.
Servez dès la sortie du four avec une salade verte.

We had dinner last night with our children and grandchildren. Also, we prepared, not 1 chicken roast, but 2...

We had a quantity of remains sufficiently consistent to prepare a chicken pie and here's what happens:

Chicken Pie

Thermomix puff pastry
1/2 litre of béchamel sauce
Leftover chicken, boneless and Skinless, cubed
1 small can of asparagus, cut into sections
Grated cheese

Preheat the oven to 180 ° C, fan.

Mix chicken, asparagus and béchamel sauce and garnish the pie.

Pâte feuilletée - Puff pastry

C'est une des recettes que l'on fait en premier et qu'on utilise souvent tant elle est meilleure que les industrielles vendues en magasin.

C'est simple à faire quand on a un Thermomix.

Pâte feuilletée

150 g de farine
150 g de beurre congelé en petits cubes
75 g d'eau glacée
1 pincée de sel

Mettre le tout dans le bol du Thermomix et programmer 15 s à vitesse 6, puis, à la sonnerie, 10 s, sens inverse, vitesse 2 pour décoller la pâte.

Etaler en un rectangle dons la longueur fait 3 fois la largeur. Rabattre le tiers supérieur vers soi puis le recouvrir par le tiers inférieur.

On refait le même rectangle, on répète l'opération de pliage et on tourne d'un quart de tour vers la droite.

Répéter l'opération 3 fois.

La pâte est prête à l'emploi.

Puff pastry

150 g of flour
150 g butter frozen into small cubes
75 g of ice water
1 pinch of salt

Béchamel

C'est une recette triviale que l'on retrouve un peu partout mais surtout à la plage 36 du livre "A table avec Thermomix". Mais, on se sert si souvent de béchamel en cuisine que je pense qu'elle mérite une petite place dans mon blog, sans compter que je pourrai la citer via un lien.

Béchamel:

500 g de lait
60 g de farine
40 g de beurre
Sel et poivre à discrétion
1 pincée de muscade

On met tout dans dans le bol du TMX et on programme 7 min, 90°C, vitesse 4...

Et voilà, on ne peut faire plus simple.

Carottes à la crème - Carrots with creme fraiche

Il nous restait du gratin dauphinois de la veille mais pas suffisamment pour 2 personnes. Il nous restait aussi quelques carottes dans la réserve. Oui mais, pas suffisamment pour 2 personnes. Qu'à cela ne tienne, il suffit de marier les 2 légumes. Nous avons donc préparé des carottes à la crème au Thermomix, mélangé avec le reste de gratin et mis au four. Ca a fait un accompagnement parfait pour une cuisse de dinde à la bière.

Carottes à la crème

500 g de carottes
1 petit oignon
1 gousse d'ail
10 g de beurre
125 g de vin blanc sec
Sel et poivre
50 g de crème fraîche
Persil

Pelez et coupez les carottes en grosses rondelles.

Pelez et coupez l'oignon en 2. Epluchez les gousses d'ail. Mettez les dans le bol du TMX avec le beurre et réglez 5s à vitesse 5.

Ajoutez les rondelles de carotte, le vin blanc, sel et poivre et réglez 30 min, sens inverse, 100°C, vitesse mijotage.

A la sonnerie, ajoutez la crème fraîche, le persil haché et programmez 30 s, vitesse 1.

Il n'y a plus qu'à mélanger avec le restant de gratin dauphinois et de passer 1 minute au micro-onde.

Nous avons servi ces légumes en accompagnement d'une cuisse de dinde à la bière:

Dans un plat à four, mettre une cuisse de dinde, une dizaine d'olives noires dénoyautées et une bonne canette de bière.  Laissez cuire 3 ou 4 heures à 140°C en arrosant de temps en temps.

Et voila.

125 g of dry white wine

- Turkey leg cooked in beer:

Place in an oven dish, a Turkey leg, a dozen of pitted black olives and a can of good beer. Cook 3-4 hours at 140 °C basting from time to time.

Gratin de panais et patates douces - Parsnip and sweet potatoes gratin

Le panais, vous connaissez ? Cette racine qui ressemble à une carotte, blanche, qui donne une chair un peu sucrée au goût délicat. Et la patate douce, que vous mangez d'ordinaire rôtie au four ou seule en purée. Ces deux racines vont très bien ensemble et ne demandent qu'à être mariées pour le plus grand bonheur de nos papilles.

Voici ce que ça donne dans mon Thermomix. Les réglages de bases sont fortement inspirés du livre "A table avec Thermomix".

375 g de panais
375 g de patates douces
- poids légumes épluchés
500 g de lait
Sel
Poivre de Kampott
Epices à pain d'épices
- ou cannelle
150 g de lardons fumés
1 œuf
30 g de crème fraîche épaisse
Gruyère râpé
Beurre plour le plat

Il convient tout d'abord d'éplucher les légumes, de les rincer et de les découper en morceaux.

Installez le fouet papillon et placez ces légumes dans le bol du TMX. Ajoutez le lait puis programmez 25 minutes, 100°C, sens inverse, mijotage. Otez le bouchon pour que la vapeur puisse s'échapper.

A la sonnerie, programmez Vitesse 4, 45 sec pour homogénéiser le mélange. Vous obtiendrez une purée assez lisse. Otez le fouet papillon.

Ajoutez les lardon fumés et la crème fraîche.

Mélangez 30 sec, vitesse 3, sens inverse.

Beurrez un plat à gratin, versez et répartissez le mélange et le gruyère râpé.

Enfournez à four préchauffé à 220°C, sur le gradin supérieur, jusqu'à l'obtention d'un beau gratin.

Servez aussitôt.

375 g of parsnips

Gingerbread spice
-or cinnamon
150 g of smoked bacon
1 egg
30 g of thick cream
Grated Gruyère
Butter plour dish

You first peel vegetables, rinsed and cut them into pieces.

Install the butterfly whip and place the vegetables into the bowl of TMX. Add the milk and then set 25 minutes, 100 ° C, meaning opposite, simmer. Remove the cap so that the steam can escape.

At the ringing tone, program speed 4, 45 sec to homogenize the mixture. You will get a fairly smooth puree. Remove the butterfly whip.

Add the smoked bacon and sour cream.

Mix 30 sec, speed 3, reverse direction.

Butter a gratin dish, pour and spread the mixture and the grated cheese.

Bake in preheated oven at 220 ° C on the upper oven rack until you get a fine gratin.

Ratatouille

Bon d'accord, la recette est triviale et je n'ai pas fait œuvre de création. La recette est fortement inspirée de celle qui est dans le livre "A table avec Thermomix", à laquelle j'ai amené quelques légères modifications. Mais ce qui reste bien sur très important sont les réglages proposés par Thermomix.

Tout d'abord, j'ai fait revenir l'oignon, l'ail et l'échalote à température Varoma, puis j'ai ajouté 1 càc de bouillon concentré de légumes fait au Thermomix et enfin, je me suis permis d'ajouter quelques olives vertes. Il va me falloir essayer avec des olives noires à la grecque...

Ratatouille pour 2 personnes:

2 courgettes
1 aubergine
2 tomates
Quelques olives vertes
Quelques tomates cerise séchées et confites à l'huile
1 oignon
1 échalote
1 gousse d'ail
20 g d'huile d'olive
Thym
Bouillon concentré de légumes
Sel aromatisé
Poivre rouge de Kampott

Dans le bol mettre l'oignon coupé en 2, la gousse d'ail et l'échalote puis mixer 7 sec à V5. Racler les parois vers le bas à l'aide de la spatule.

Ajouter l'huile et régler 5 minutes à température Varoma, sens inverse, vitesse mijotage.

Pendant ce temps laver et couper les courgettes en rondelles d'un cm, les autres légumes en gros dés.

A l'arrêt de la minuterie, ajoutez tous les légumes, salez, poivrez et réglez 30 minutes, 100°C, sens inverse, mijotage.

Servez avec du couscous et une escalope de dinde par exemple.


Okay okay, the recipe is trivial and I did not do a work of creation. The recipe is strongly inspired by that which is in the book "A table with Thermomix", to which I brought some minor changes. But what remains well on very important are the settings proposed by Thermomix.

Ratatouille for 2 persons:

2 Zucchini
1 Eggplant
2 tomatoes
Some green olives
A few cherry tomatoes dried and preserved in oil
1 onion
1 shallot
1 clove garlic
20 g of olive oil
Thyme
Concentrated vegetable broth
Salt flavoured
Kampott red pepper

Add oil and set 5 minutes at Varoma temperature, reverse, speed set on simmer.

Gratin de côtes de blettes - Chard stalk gratin

C'était notre repas dominical, un repas complet ou le Thermomix a bien mérité son surnom de plus petite cuisine du monde.

Pour 2 personnes

Les côtes d’un pied de blettes (ou bettes, ou poirées)
2 ou 3 pommes de terres, suivant leur taille
2 œufs
- Pour la béchamel:
500 g de lait
60 g de farine
45 g de beurre
Sel et poivre à discrétion
1 pincée de noix de muscade

Commencez par parer les côtes de blettes puis découpez les en tronçons.

Epluchez 2 ou 3 pommes de terre, suivant leur taille et découpez les en dés.

Mettez 750 g d’eau dans le bol du TMX.

Placez le panier cuisson avec les œufs dans le bol. Fermez le couvercle, placez le Varoma avec les côtes de blette, dessus mettez le plateau avec les pommes de terre, mettez le couvercle du Varoma.

Programmez 15 minutes, Temp Varoma, Vitesse mijotage.

A la sonnerie, ôtez le panier cuisson avec les œufs puis poursuivez la cuisson 10 minutes supplémentaires avec les même paramètres.

A la sonnerie, ôtez le varoma et laissez les légumes s’égoutter.

Pendant ce temps, videz le bol, pas la peine de le rincer et mettez y tous les ingrédients de la béchamel et programmez 7 minutes, 90°C, Vitesse 4.

Répartissez les côtes de blette et les pommes de terre dans 2 plats individuels, mettez sur le dessus les œufs coupes en 2, nappez de béchamel et enfournez à four préchauffé à 220°C, sur le gradin supérieur, le temps de réchauffer et de glacer (gratiner) la béchamel .

Concentré de bouillon de bœuf - Beef stock concentrate

Il y a bien sur la recette donnée par Thermomix. J'ai malgré tout fouillé le web à la recherche de ce qui se faisait ailleurs et donc recompilé ce que j'avais trouvé. Ca donne ceci:

350 g de viande de boeuf hachée
350 g de légumes :
- 100 g de céleri branche
- 100 g de carottes
- 1 tomate
- 100 g de vert de poireau
Des aromates:
- Thym
- Laurier
- 1 clou de girofle
- 2 gousses d'ail
- 1 càs de concentré de tomates
150 g de vin blanc sec
2 càs d'huile de tournesol
150 g de gros sel


Hacher les légumes et les aromates : 20 sec V6

Ajouter tout le reste et programmer 40 min, temp Varoma, Vitesse de mijotage, remplacer le bouchon par le panier de cuisson (laisse passer la vapeur tout en empêchant les projections).

A la sonnerie, vérifier que l'ensemble est suffisamment asséché, remettre le bouchon et passer à V10 pendant une minute.

Mettre en bocal. Se conserve très bien au frigo pendant plusieurs mois, compte tenu de la teneur en sel.

Utiliser à raison de 1 càc pour 1/2 l de liquide.

Use at the rate of 1 tsp for 1/2 l of liquid.

Cakes en bocaux - Cake in a jar

Tout à commencé il y a quelques temps par une émission, 100% Mag sur M6, dans laquelle passait Lilly et ses fameux cakes en bocaux. Puis, un peu de temps est passé et je suis tombé sur un site, La cuisine de Lily, site dont le propriétaire était justement passé dans 100% Mag. J'ai également fouillé la blogosphère et je me suis aperçu que cette idée de mettre des gâteaux en bocaux se retrouve sur de nombreux sites aussi bien français qu'anglo-saxons. La plupart des blogs français se réfèrent à "La cuisine de Lilly", mais j'ai malheureusement vu un site qui n'hésite pas à faire un copier-coller servile laissant ainsi penser qu'il a la paternité de la chose. Il y a des voyous partout

Mais rendons à Jules ce qui appartient à César. Si l'idée n'est pas nouvelle, les façons de procéder peuvent largement différer, le blog La cuisine de Lilly a l'immense mérite de clarifier les choses et de les vulgariser.

Pour mon premier essai, j'ai fait un cake à la farine de châtaignes et j'ai bien sur mis à contribution mon Thermomix.

Cake à la farine de châtaignes en bocaux

100 g de beurre
100 g de sucre en poudre
2 œufs
95 g de farine de blé
45 g de farine de châtaignes
5 g de poudre à lever (1)
Beurre pour les bocaux
Poudre d'amande

Commencez par mettre le sucre dans le bol du TM31 et pulvérisez 10 sec à V10. Raclez les parois vers le bas.

Ajoutez le beurre en morceau et réglez 2 minutes, 37°C, pétrin.

Ajoutez les œufs et mélangez 30 sec à V4.

Ajoutez les farines ainsi que la poudre à lever. Réglez sur 2 minutes, pétrin.

Passez les bocaux à l'eau bouillante ainsi que leur couvercle. Beurrez les bocaux et mettez de la poudre d'amandes. Ceci facilitera le démoulage.

A ce stade, j'ai divisé la pâte en 2 et dans une j'ai mélangé un peu de chocolat amer en poudre et, en utilisant une poche à douille, j'ai alterné les couches de pâte.

Nettoyez les bords des bocaux avec un papier absorbant.

Cuisson bocal ouvert, 30 min à 180°C.

Dès la sortie du four, placez le couvercle et retournez le bocal sur un torchon, comme pour des confitures.

On entend un petit "plop", c'est le couvercle qui se rétracte quand le bocal refroidi, signe que la stérilisation est bien faite.

A déguster sous 6 mois.

Chestnuts flour cake in a jar

100 g butter
100 g powdered sugar
2 eggs
95 g of wheat flour
45 g of chestnut flour
5 g of backing powder
Butter for jars
Almond powder

Start by putting sugar in the bowl of the TM31 and proceed 10 sec at speed 10. Scrape sides down.

Add the butter into pieces and set 2 minute, 37 ° C, kneading position.

Add the eggs and mix 30 sec at speed 4.

Add flours and backing powder. Set to 2 minutes, kneading position.

Pass the jars in boiling water as well as their cover. Rub with butter inside the jars and dust with ground almonds. This will ease the turning out of the cakes.

At this stage, I divided the dough in 2 and I mixed a bit of bitter chocolate powder in one half and, using a pastry bag, I alternated the layers of dough.

Clean the edges of the jars with a paper towel.

Backe the open jar, 30 min at 180 °C.

Right out of the oven, place the lid and return the jar on a cloth, as for jams.

A small 'plop' means it is the cover that retracts when the jar starts to cool, signs that sterilization is done well.

Enjoy it within 6 months.
