Léontine normande - Norman Léontine

Lors de notre semaine normande, nous nous étions arrêter déjeuner à Bayeux au "Trou normand", endroit que je recommande au passage, et il y avait des "Léontines normandes" à la carte. Après avoir goûté la chose, bien roborative par ailleurs, j'ai essayé de la reproduire et ma foi, le résultat est quasiment identique à ce que nous avions mangé.

Voici ce que ça donne pour 4 personnes

1 pâte feuilletée Thermomix
1 càs de compote de pommes
1 oignon doux
1 càs de beurre
200 g de pommes de terre
250 g de blanc de poulet
160 ml de crème fraîche liquide
80 g de camembert au lait cru
1 càs de moutarde à l'ancienne
Sel et poivre blanc

Commencez par faire une pâte feuilletée que vous mettrez sur une assiette au réfrigérateur.

Pendant de temps, hachez l'oignon 5 sec vitesse 6, raclez vers le bas. Ajoutez le beurre et la compote de pommes, faites cuire 8 min, vitesse 2, température varoma. Réservez.

Sans rincer, mettez 500 g d'eau dans le bol. Installez le panier cuisson avec les pommes de terres pelées, coupées en rondelles. Installez le varoma avec les blancs de poulet et programmez 20 minutes, température varoma, vitesse 2.

A la sonnerie, réservez. Préchauffez le four à 180°C, chaleur tournante.

Jetez le reste d'eau qu'il y a dans le bol puis mettez la crème, le camembert coupé en dés, une pincée de sel (peu), un tour de moulin à poivre et programmez 6 minutes, 80°C, vitesse 3. A la sonnerie, ajoutez une càs de moutarde à l'ancienne et prolongez la cuisson d'1 minute.

Coupez la pâte feuilletée en 4 parties égales. Abaissez chaque pâton en forme de rectangle de taille identique. Repliez les bord sur eux-même, 1/2 cm, pour former un rebord. Mettez ces rectangles de pâte sur une plaque chemisée de papier cuisson.

Tartinez chaque rectangle de compotée d'oignon. Dessus mettez des rondelles de pomme de terre, puis des tranches fines de poulet et nappez de sauce au camembert.

Enfournez 30 minutes.

Envoyez avec une salade verte.

Spread each rectangle of onion Compote, then potatoes, then the thin slices of chicken and drizzle with camembert sauce.

Bake 30 minutes.

Eat with a green salad.
